Cork is the county I never knew I’d like. If I am being honest, I had wanted to go to Cork the entire time I was studying abroad in Galway, so I finally booked a day trip just to Cork (city) and took a taxi out to Blarney Castle. I like Blarney. I thought the garden was fun and there was something just unserious about the place that struck me. As for Cork city, I found it to be lacking. Something was missing. It was a city without the stuff to do, if that makes sense? So I never thought much of Cork until I planned a long weekend on one of my trips back to the colorful coastal towns of the county. Now my view of Cork has completely shifted. Now, what is Cork? Beyond their reputation of having one of the craziest accents in Ireland, Cork is known for its rising food scene whether you are visiting the English Market in the city or one of the up and coming restaurants in Kinsale. Cork is also its coast. Being the most southern part of the island, it has served quite a role in the country’s history and you can see just that through the Titanic Experience in Cobh or one of the many British forts that remain along the water. While Cork doesn’t have the cliffs and scenic rocky terrain of the west coast, it has its own beauties that Ireland wouldn’t be complete without. There is the Blarney stone, the colorful homes of Kinsale, the towering catheral of Cobh, and so many little islands and beaches that make Cork so great. If you are looking for the perfect Ireland island holiday, then this is the place.
